    I make vegetable kung pao with peanuts at least once a week. Josh loves it, I love it, and it's quick and easy to make. I'm pretty sure I could make it with my eyes closed. I sauté two or three cups of celery and one chopped onion in 1-2 T sesame or olive oil. Cook until tender. I add fresh or powdered garlic, white pepper, a few pepper flakes, and one or two shakes of chinese five spice. Then I add about 2 T soy sauce, 2 T rice vinegar, 2 t sugar or honey, a shake of cornstarch and then 1/2 - 1 C. chicken of vegetable stock.     Today's lunch reminds me of my mom and home.  I used Bobby's Goulash as a base recipe because it's the closest to my mom's goulash.  My version only had one pound of ground beef, I used diced tomatoes and an open jar of spaghetti sauce, I replaced two pounds meat with 3 cups of diced cremini mushrooms, and I used worcestershire sauce instead of soy sauce.  Aside from the mushrooms, which remind her of snails, I think she'd approve! I ate this meal almost three hours ago and I'm still sufficiently stuffed. It looks like dinner won't be for a few more hours. Time to get my Insanity on!

    This morning's breakfast: whole wheat toast with butter, local eggs (these guys were huge!), and a little fruit salad of cherries and clementines. I'm taking time to eat a filling breakfast in an attempt to eliminate the need for a snack before lunch. If I just eat cereal or something lighter, I'm hungry one or two hours later. Sometimes I'm just not satisfied and I find myself looking for something else to eat regardless of hunger. I'm thinking this will tide me over for at least four hours.     Today was day THREE in a row that I have been to the gym. And man, I am getting sore! Not really sore in a bad way, but sore as in "your butt hasn't been moving like this in a while" sore. I did 45 minutes Monday and today, and yesterday was 30 minutes because I was short on time (but determined to get it in). And I am giving it all I've got. But my body feels like I weigh every bit of 300+ lbs.

    Whew! Crisis mode over. Thank goodness ALL the stressy stuff has worked out well so far, and quickly! Our elderly mini-dog started another medication today after our vet consulted with some other vets, and they think this should help him be less agitated and afraid. He has congestive heart failure and a bit of senility going on, so he already started Lasix for the coughing and now this new drug will help with the mental side and he should be happier and more comfortable.     I can't believe it but I'm still in the groove and seriously motivated. I ate A LOT over the weekend but it's not so devastating to the diet when you are working for it.     In 2011 I let myself regain about 9 kgs (about 20 pounds) of weight which was probably not a good idea in hindsight!  Most of this was gained in the last 5 months of 2011 due to excessive snacking. Having said that I’ve made a commitment with myself to get back down to the normal BMI again in 2012.  To do that I need to lose about 14kgs (about 31 pounds).  My main meals are generally very healthy and my exercise regime is sound so to do that all I really have to do is abstain from unhealthy snacks.     My good friend Peter has become a bit of a devotee of the “Run less, run faster” method of marathon training ever since I loaned him the book “Runner’s World Run Less, Run Faster: Become a Faster, Stronger Runner with the Revolutionary FIRST Training Program”.     One big advantage of being injured and having to take a bit of time off from running has been that I’ve been able to support my wife’s running a bit more. Last week she did the ADRA half marathon. Originally we were both going to do it but I wasn’t running anymore so she had to do it by herself.  This worked out really nicely in a way in that I could take our daughter along to cheer for her.  And boy did we cheer.  We drove our to a few spots around the course and cheered her on.  I’m pleased to report that it seemed to help as she smashed her half marathon PR by about 5…

    It was about this time a week ago when I felt the first little tingle-itch in the back of my throat that signaled the beginnings of my cold, which makes today my 1-week Coldiversary.     I hurt my left shoulder joint about 2 weeks ago (playing ball) and its been tough to do a strength workout without pain. It has affected my fat burning potential because of subpar workouts.     I have a therapist for a mother.  I love that!  She is so good at communicating and is a complete genius at what she does.  Her favorite thing to say to me lately for as long as I can remember is, “Tell me Something Good!” I have to tell her something good that is going on in my life or she will continue to ask me until I can think of something.  I love that!  In all situations, there is something good that can be found.     Setting our Yearly Weight Loss Goals! Monday, my weigh in day was a day off of work for me.  It was the celebration of Martin Luther King Jr, so, as a teacher, I had the day off work! I started my day off with a nice long walk/run.  That was a great way to spend my morning off work!  Then, I spent the rest of the day with my mom, sister, nieces and nephew.     After I watched Forks Over Knives on Netflix, I watched the companion video on the Engine 2 Diet, where author Rip Esselstyn visits a couple of families to show them how to green up their eating and make some "plant-strong" recipes. One of the recipes called for dinosaur kale, which had me intrigued so I bought some last week. It's a darker green and larger than the garden-variety kale.     Consider this a big ol' salad bowl of Shrinking Sisters info today. I was watching the Dr. Oz Show last week and saw a cool new product -- the Mastrad TopChips kit, which consists of a mandoline slicer and a silicone tray. You slice your fruits and veggies paper thin, then place them on the tray and microwave, making chips. I ordered one from Amazon and it just arrived this morning, so I grabbed an apple to try it out.     I know a fellow that is trying to lose weight and eat better.  However, he runs into problems sometimes when eating out with other guys.  He says it is "emasculating" to take home leftovers or have the restaurant box up half at the start...so he just eats the whole thing.  He also thinks it's less manly to eat salads or other healthy fare, sometimes.     Thanksgiving Day is rough for a lot of us, isn't it?  Foods that we only usually have a few times a year are everywhere.  Stereotypically, we are supposed to eat until we're overstuffed...and still make room for some desserts after.     One of the things that I like about Weight Watchers is that no food is off limits.  Of course, you can't eat a whole bag of Reese's peanut butter cups (yum!) all the time, but you can have some here and there as long as you watch how many points it is and account for it. You can also go out to eat too.  I like to go the restaurant's website and check out the menu before I go. Many places now list nutritional information (thank goodness!), so it makes it much easier to know what my options are and choose accordingly.
